Grandmother’s Kugel (noodle pudding) 1 (1 pound) loaf French bread, cut diagonally in 1 inch slices 1 16-ounce package broad egg noodles 3 large apples (Granny Smiths or comparable) 3 eggs, separated ½ cup raisins ½ cup sugar Lots of Cinnamon Pinch of salt 1 stick butter (margarine if you must) |

Boil the noodles (don’t overcook). Pare and dice the apples and mix them with the noodles. Beat the egg yolks and add the raisins, sugar, cinnamon, and salt. Pour over the noodles and stir gently to distribute. With a little of the butter, grease a Pyrex dish large enough to hold the noodles. Cut up the rest of the butter and mix with the noodles. Whip the egg whites until stiff and gently fold into mixture. Pour into baking dish and bake at 350F for 30 minutes or until golden. |
