Yellow Rolls of Texas (Jalapeno Cornbread)

1 ½ cup self-rising cornmeal

1 egg, beaten

½ cup grated cheddar cheese

1 cup buttermilk

½ chopped onion

½ cup creamed corn

½ salad oil

¼ cup jalapeno pepper-chopped

Combine all ingredients and place in an 8x8” greased pan.  Cook for 1 hour at 350F.  Remove from over and let cool a few minutes, before cutting.  (Shred cheese on top for a special touch!

 

Note:  If you double the recipe, use 3 eggs.
